After selective handpicking, cherries undergo a natural drying process on raised beds, ensuring controlled fermentation and even moisture reduction. The result is a clean, fruit-forward profile with distinct red fruit acidity, apple brightness, and a chocolate finish that provides structure and balance.

Roasted to a medium level, this coffee preserves its natural sweetness and complexity while maintaining a rounded body — ideal for both filter and espresso applications.
