The Story
From our Ethiopian partners, Tracon,
This coffee comes from the high-altitude region of Yirgacheffe, Ethiopia, known worldwide for its distinct and expressive flavor profiles. Grown from local heirloom varieties and produced by Tracon, this release showcases the clarity, sweetness, and complexity that define great Ethiopian coffee.
The lot was naturally processed at the Adado station using traditional methods. After harvest, cherries go through an initial screening, where floaters and visibly underripe or damaged cherries are removed. The remaining cherries are then washed with clean water and transferred to raised drying beds, where they are turned regularly by the processing team to ensure even drying and to avoid overfermentation.
Once the drying is complete, the coffee is rested in a cooperative warehouse, allowing flavors to stabilize before export. This careful handling results in a vibrant cup with red fruit acidity, smooth chocolate undertones, and a crisp berry finish.
Balanced and bright, this coffee is a true reflection of skilled processing and regional character, delivering a clean yet lively experience in every brew.
