The Story:


Exotic coffee processed by Cofinet,


When we tasted this coffee for the first time, we imagined drinking an iced coffee like this during the summer in Riyadh, so we decided to order it and share this experience with all our customers.


This coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, ripe blueberries were added. The cherries were then pulped and placed to dry on raised beds with ripe blueberries placed amongst the coffee until the ideal moisture content was achieved. 



Suggested recipe:


Filter:

Coffee Dose In: 20gr

Water: 320ml

Blooming: 40gr x 30”

Time: 2:30”

Temp: 91 C

Steps: after blooming, 2 pours 100ml,1 pour 80ml. total 320ml



Espresso:

Coffee Dose In: 18gr

Out: 36ml

Time: 34”

Temp: 93 C
